Mole, a sauce of pre-Hispanic origin made out of 26 basic ingredients like four different types of chili, almonds, nuts and chocolate, cooked according to traditional recipes, and handed down through the generations, is a culinary treasure in the town of San Pedro Atocpan - which means "fertile land" in the Nahuatl language.
